Summer Blackberry Cobbler

Cobbler is at the top of one of my favorite summer dessert dishes. Here’s a very quick and easy recipe to prepare with fresh summer blackberries. This is the recipe my mom uses to make her fresh homemade blackberry cobbler.  It can be served plain or with a scoop of vanilla ice cream and best served fresh out of the oven. Other fresh fruits like blueberries, cherries or even peaches could be used as well. But blackberries are my favorite. This is a quick and easy dessert to throw together for a family cookout, picnic or on any summer evening. I hope you enjoy this delicious recipe as much as I do!

Crust Ingredients:                                               

1 cup all-purpose flour

2 tablespoons sugar

1 ½ teaspoons baking powder

¼ teaspoon salt

4 tablespoons butter

¼ cup milk

1 slightly beaten egg

Filling Ingredients:

4 cups fresh blackberries

½ cup sugar

2 tablespoons cornstarch

First preheat your oven to 400 degrees. Then mix flour, sugar, baking powder and salt. Combine the milk and egg in separate bowl and then add to dry ingredients. Stir to just moisten. Set aside.

Next combine blackberries, sugar and cornstarch in a pan. Cook over medium to medium high heat stirring frequently until brought to a boil. Boil for one minute. Pour the filling into an 8×8 baking dish. Dab with a tablespoon of butter. Put about seven spoonfuls of crust on top of filling. Cook for about 20-25 minutes, until crust is a light golden brown.
